A Fall Cleansing Soup Recipe

Mark convinced me to join him on a 21-day-challenge cleanse which is basically all vegetables and fruits.  I’m usually game for anything but I must say it’s been difficult at times. Grrrrr!  Ok, more than difficult at times!  However, in the eye of that difficulty, I’ve been forced to create some new recipes where meat, wheat and dairy don’t exist. This is very new turf for me.

We made our usual sojourn to the Barryville Farmer’s Market and scored a bunch of beautiful veggies.  It’s fall here in the Northeast with a pleasant crispy chill in the air that once again calls for a hearty pot of soup on the stove.  So, given the 21-day challenge, I set out to make an amazing soup without using any dairy, wheat or meat.  Below is what I created and I must say I’m proud of the outcome.  I used an avocado to make it really creamy and I grilled the veggies, before placing them in the food processor, to add a smoky flavor.   Trust me, your friends and family will never ever know this is an all veggie soup.  They will just say….mmmmmm!

 

Roasted Tomato, Red Pepper & Avocado Soup (AKA… OMG Soup!)

Ingredients:

6 medium tomatoes

2 red bell peppers

2 cups vegetable stock

1 avocado peeled and pitted

1 onion sliced

1 small Serrano chili

3 Tbsp chopped cilantro

4 cloves garlic diced

1 tsp cumin

olive oil

salt and pepper to taste

Instructions:

Roast tomatoes and peppers on grill until moderately charred. Set aside to cool.  Once cooled, remove seeds from red bell peppers (leave seeds of tomatoes and Serrano chili).

In a skillet, sauté onions and garlic with a drizzle of olive oil.  Cook until golden and set aside.

Place all ingredients in a blender on medium speed for four minutes or until creamy smooth.

Transfer to a like sized pot on low heat until warm.  Serve with a pinch of chopped cilantro in each bowl.

    I know this sounds a little strange, but I don’t like tomatoes raw but love them cooked in something. This recipe sounds so good, I would love to try it. I usually put crackers in my soup but the way this soup looks and the ingredients, don’t think it would need any.

    I love soup and this one sounds amazing. My mother used to make a delicious gazpacho with avocado in it. Love the pairing of tomato and avocado. Your recipe seems like it is perfect for a chilly fall day!

    Yummy yummy, it’s going in my tummy!!! I just made chili yesterday but since I have all the ingredients I am going to make this tonight! So glad my kids are soup lovers like me! The only downside is, I bought 2 avocados to make some guacamole but I guess a half catch of guac is better than no guac :)

    I’m from Minnesota……last night on the news I heard northern Minnesota could see snow showers this week. OMG! Summer is really over!! I need to have me some comfort food on the cold nights that will descend upon me soon …..roasted tomato, red pepper, avocadoes….OMG Soup! will help to ease my anxiety.

    I love soup any time of the year. It is always a comfort food to me no matter the kind. I had fond memories of a tomato soup my grandmother made, yet I do not have her recipe. Perhaps, this is close.

    I often have sliced tomatoes and avocados with hummus on spelt toast for breakfast (no wheat, no meat!), so I know I’ll like this soup during the cold months.

    It should be called: Superfood Soup!
    1) Tomato = lycopene, anti-cancer goodness, scavenger of the bad free radicals.
    2) Red pepper = antioxidants, vitamins and minerals. Helps to strengthen your immune system.
    3) Avocado = anti-inflammatory. Lowers blood pressure and protects eye health.

    I recently did a cleanse for 1 month starting last wk in Aug. Had no real hunger. Was not allowed any night-shade veggies (tomatoes) but will def. give this soup a try the rest of the time. I am not creative in the kitchen so appreciate any ideas I get elsewhere :) See ya
