Cozy Black Bean Soup

Cozy Black Bean Soup

Ingredients:

  • 3 cups canned black beans (rinsed)
  • 6 slices of cooked and crumbled bacon
  • 1/2 cup orange juice
  • ¾ cup red wine
  • 2 cups chicken stock
  • 2 medium onions, chopped
  • 4 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 pinch of red pepper flakes
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/2 ripe avocado, chopped for garnish
  • olive oil
  • salt and pepper to taste

Instructions:

Sautee onions and garlic in a drizzle of olive oil until translucent.  Add remaining ingredients. Simmer on low for 2 hours, stirring occasionally.  Garnish with chopped avocado and raw onion.

    Bacon, Wine, Onions, Cumin….. Sounds great for a fall lunch! Maybe a nice loaf of crusty bread to dunk too!

    Never tried black beans, cooking navy beans for supper TONIGHT, will keep a copy of your recipe for another time :-) Maybe Tammy will try them too if I make a pot.

    The black bean soup looks delicious! I sure old go for a nice big bowl with some warm crusty bread! It would be perfect on this cold blustery night while we are waiting for the snow storm that is expected to fall! Then I would pull up a hair in front of the wood stove which is blazing! Perfection! Just like the soup!

    I am intrigued with the addition of the orange juice and LOVE cilantro….like really love cilantro and cumin (people don’t use it enough in our neck of the woods and can never figure out that “flavor”)…..so this will be a definite must try at our next gathering…on a cold day in front of our fireplace!     I think the addition of the avocado to your blackbean soup could add a real creamy texture. And I’ve never thought of white wine in succotash but it could really update an old classic looking forward to making them both.

    Well Black Bean Soup has always been one of my favorites. I have only really made Chicken & pea soup myself as I am not much of a cook. But boy can I sing!
    Still I am going to take a stab at this recipe Coop. I will let you know how it turns out my friend.

    My husband smokes turkey legs in our smoker and use them in bean soup instead of ham hocks, yummy. Your soup is perfect for a chilly winter/fall day.
